Remove hardcoded versions of node from GH workflows

      Description

      As we align with node v14, we should remove, if possible, any hardcoded versions of node fro the GH workflows. If this is not possible, we should bump them to v14. We should also update the "engines" property on the package.json file, so that it matches the minimum required v14.
