Create Elastic and OpenSearch modes for Search Mapping

Context

With LTS 2023 we now have two distinct search services, ES and OpenSearch. The current mapping feature is branded 'Elastic', should be both and should be able to treat each individually. The services are now the same but differences should appear. 

To Do

Change the language of the Search mapping feature to make it service neutral. 

Create a option for 'Create Elastic' and ' Create OpenSearch'
