Fix bad replacements when releasing Studio

      Description

      Some replacements are done whereas they should not (see NXP-13846 and commit https://github.com/nuxeo/nuxeo-studio/commit/63ffcc84e22ea04457562da70cb2f4385f68f3c2)

      Also the studio-app.cfg version replacement should be done automatically.
