      Description

      We are currently deploying a Kafka cluster version 3.3.1 in the CI for our LTS 2023 tests/benchmarks.

      We want to deploy and test against the latest version available, currently 3.6.0.

      When done, update also the documentation https://doc.nuxeo.com/nxdoc/compatibility-matrix/#kafka stating the recommended/tested Kafka version (cluster and client version).
