Remove Zookeeper in CI tests

      Description

      Removing Zookeeper, aka using KRaft mode,  would simplify the Kafka setup, see https://msazure.club/deploy-kafka-without-zookeeper/.
      It will be easier to maintain, faster and will use less resources.

      Note that the Kafka Bitnami Helm chart uses Kraft mode by default since 22.0.0.

      This is for 2023, let's see what we can do for 2021 as we're using Kafka 2.6.0 in the CI.
