Fix PyInstaller to allow upgrading to the newest version

      Description

      As seen with NXDRIVE-2056, PyInstaller has broke the AppImage. I reported the issue but without interests since months.
      As we need to move to Python 8, we need to fix PyInstaller in order to have Python 8 support in PyInstaller.

      So we will allocate time to help the PyInstaller team on that subject.
