Add support of amazon elasticsearch version

Because Amazon Elasticsearch Service does not (yet) provide latetest version of elasticsearch (5.6 and 6.3 are missing) the compatibility matrix must be updated:

Nuxeo 9.10 -> Cluster 5.6.x (or amazon elasticsearch service 5.5)
Nuxeo 10.2 -> Cluster 6.3.x (or amazon elasticsearch service 6.2 until 6.3 is supported)

Note that these elasticsearch versions (9.10/5.5 and 10.2/6.2) have been successfully tested and are used interenally.
