Fix ApplicationDefinition matches for TP 11.2.x and following

Before having the version range, in order to support version 11.2.x and the following, we made an update to consider the target platform 11.1 as 11.*. But this workaround is not available in the Application Definition resulting in the impossibility to install 0.0.0-SNAPSHOT versions on Nuxeo Platform 11.2.x and the next ones.
