Fix unit tests related to doc signing

      Description

      These tests require a keystore field of simple type "store". This does not work correctly as this is contingent on a resolution to NXP-6301.
      Another fix that nees to be done is related to database persistence approach (probably a mock directory will be added to handle these tests)
