Provide a way to start an embedded Opensearch1 server for dev

We want to have a way to start an embedded Opensearch server to be able to test Nuxeo in standalone mode (like we have in 2023).

Either add this option to the Opensearch Search client package, either create a dedicated package to avoid adding too many lib and be more explicit.
