      Description

      We want to bump the third-party services we use to the latest available and compatible version for the upcoming LTS 2025.

      • PostgreSQL, both the Java driver version and the version we use in our CI
      • MongoDB, both the Java driver version and the version we use in our CI
      • OpenSearch, both client and server we use in our CI
      • Kafka, both client and server we use in our CI (if possible)

      We also want to test latest Elasticsearch 7 and 8 version, be sure it's the case.
