Run Nuxeo unit tests against the latest Elasticsearch 7.17.x

      Description

      Current latest version is 7.17.9.

      We want to run the whole unit tests against it to validate the LTS 2021 can work with a non-eol Elasticsearch cluster.

      This validation should be triggered after the LTS 2021 release/promotion, as for the reference benchmark.

      In case of failure, a Slack notification will be sent to #platform-notifs channel.
