LTS 2023 - CentOS replacement

      Description

      Our Docker images are relying on CentOS 7.x which will come to EOL on Jun 30th, 2024.

      CentOS 8.x is not a solution for us as it is no longer a stable point distribution but a rolling release Linux distribution.

      We chose to migrate to Rocky Linux 9 (or Rocky Linux 8 if version 9 does not suit us).

      This means:

      • Validating that we can install all the tools we need on it
      • Upgrading our Nuxeo Docker images to use it as the base OS
      • Upgrading our builder images to use it as well
