Correctly configure JUL logs directory

We want to configure correctly the logs directory used by JUL and thus by Tomcat. Currently, the logs directory define for JUL doesn't leverage nuxeo.log.dir and thus Catalina logs are not written in the expected directory by the user.

The configuration for Tomcat is there.

While these configurations are useful for standard installation, it's not interesting while Nuxeo is running inside Docker. We may want to have a different approach to this case.
