Latest stable version is 1.1.0,
if they are breaking changes at least upgrade to 1.0.1.

There should be no pb to continue supporting 1.0.

This includes:

update the main pom to bump the kafka version to 1.1.0
create a docker compose 1.1.0 in integration/Jenkinsfiles wurstmeister image is available.
update the CI jobs to use 1.1.0 by default
