Handle system fields in Avro schema factories and mappers

As done in the JsonESDocumentWriter we should serialize document model fields as if they were a in dedicated schema "ecm".

TBD: should system fields be aside common and dublincore schemas or at a higher level aside primaryType in the document model ?
