Replace use of Jackson 1 with Jackson 2

      Description

      Jackson 1 is old and deprecated, we should use Jackson 2 everywhere.

      The only remaining dependencies on Jackson 1 are due to third-party libraries:

      • jersey-json-1.18.3
      • keycloak-tomcat8-adapter-1.3.1.Final (nuxeo-platform-login-keycloak)
      • browsermob-proxy-2.0-beta-6 (functional tests)
