Improve ExifTool Processor to support more date tags

Currently, we have a hardcoded list of date tags (EXIF:DateTime, EXIF:DateTimeOriginal, EXIF:DateTimeDigitized) that we use to know what tags we should convert to Date.

However, we need to improve this to support more tags of type date, otherwise they will be treated as Strings.
