Show warn at startup when not overriding a schema

Schemas definitions do not override existing schemas with same name by default: an "override" attribute is needed for the override to be effective.

There is no warn log at startup about this, which makes it difficult to understand why some schema does not hold the last definition fields => change the existing debug log to warn level.
