The instructions are correct for a simple Nuxeo installation, but they don't take into account more complex deployments:
- binaries not in the filesystem (eg S3)
- redis (that needs to be backed up to persists queued jobs too)
Also, the order in which they're made and whether it can be a hot backup depends on what information you're ready to lose, if any (notably the audit information during the backup).
