We should document the OS/JVM server timezone behavior

      Description

      Since 2021 which is dockerized the OS and JVM is always in UTC.
      Previously in LTS 2019, Nuxeo was running using the OS timezone.

      We should be very clear that new instance should be started using UTC to make sure all stored datetime are in UTC.
