Document fast track behavior in Studio

      Description

      People want to know how Studio behaves when a fast track is removed from Studio, and what are the consequences for them.

      => Document that behavior where relevant

      if the version is removed from the list, the customer will be prompted to change the target version in the project settings when loading the studio project.

Support for a fast track in Studio is: 
- as soon as a newer nuxeo server version is released, existing fast track is deprecated
- fast track is removed from the list after two versions have been released after that one
