Fix buildkit hangs during Docker image build

We observed a lot of hangs when building Docker images in the CI since 28th August.

At some point, and not necessarily on a specific step, the Docker image build freeze.

As we don't have any pointer, several things will be tried, like adding some logging/observability, some configuration tuning, disabling the autoscaler...
