Validate that LTS 2019 can be used with Elasticsearch 6.8

      Description

      We are using 6.5.3 elasticsearch library in Nuxeo 10.10, according to the documentation when using the REST client we should be able to use any cluster in 6.x with x >=5:

      This needs to be checked before updating the documentation.

      TODO:

      • run all unit and functional test against the latest 6.8
      • update benchmark infra to use latest 6.8
      • update the documentation
