The docker images used to be build in the OVH infra, so it made sense to use the OVH ubuntu mirrors.
Now that they're built in AWS, we should use the AWS mirrors instead.
Example from a stock ubuntu image in eu-west-1:
deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic main restricted deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic-updates main restricted deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic universe deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic-updates universe deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic multiverse deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic-updates multiverse deb http://eu-west-1.ec2.archive.ubuntu.com/ubuntu/ bionic-backports main restricted universe multiverse deb http://security.ubuntu.com/ubuntu bionic-security main restricted deb http://security.ubuntu.com/ubuntu bionic-security universe deb http://security.ubuntu.com/ubuntu bionic-security multiverse
