Allow per-field fulltext indexing for MongoDB

According to https://doc.nuxeo.com/nxdoc/repository-configuration/#full-text a client can configure which fields they want to include or exclude from the fulltext index. This has not been implemented for MongoDB. Since documentation is truth this is considered a bug, and should be backported to all versions if possible.
